Today’s meal idea is a standard at our house. Is mac & cheese a standard at your house? I love to make it from scratch so I can control the ingredient portions and make it as healthy as possible (without my kids even suspecting that it’s healthy).
Ingredients:
- 2-3 cups dry noodles
- 1-2 cups shredded/cubed cheddar cheese
- 3 tablespoons butter
- 3 tablespoons wheat flour
- 1/2 cup of milk (or more if you like it really creamy)
- salt and pepper to taste
Here’s how I make it:
- Cook 2-3 cups of noodles (any kind – have even had success using spaghetti noodles in a pinch)
- Once cooked, set aside in a collander
- Make a roux in the hot pan, by cooking the butter and wheat flour together over low heat, stirring continually to keep it from burning. To make sure the wheat flour is cooked well, cook for about 3-5 minutes (stop if it starts to smell too warm, like it may be starting to burn)
- Add the milk and cheese. Turn up the heat to medium and stir continually to make a nice cheese sauce.
- Once the cheese is melted, add the noodles back into the pan and stir well until noodles are coated evenly.

I’ve tried a couple versions of homemade mac & cheese but the kids still prefer the boxed brand. How sad is that? LOL But this one sounds simple and yummy. I will have to try it!

You know what my trick is? Make sure the milk is HOT like you put it in the microwave before you add it to you rou, makes sure is it NEVER grainy! :)

Looks yummy. I will definitely have to try this one. Aiden always asks for cheesy noodles when we go out for lunch with daddy. He LOVES Noodles and company. Maybe I can fool him with this!
